This tamale recipe is a "MONEY MAKING" recipe! These are the best tamales I've ever eaten and I'm a finicky tamale
eater. Don't be fooled by a tamale recipe with just an ingredients list. There's a whole
lot more to making authentic tasting tamales than knowing what's in them. This recipe
gives ingredients and step by step instructions as well as sketches to aid in technical
understanding of the final processes.
I have given samples of these tamales to die hard tamale eaters who think they already get the best, and tell them "just throw them away when they get home."
It never failed, no....not once, that they came back the next day asking how much for a dozen! At this point they're already "hooked." Even people who didn't like tamales love these. However, I was surprised to discover how many people actually eat tamales, every week, all year long. After they find out about these, word spreads quickly and it's hard to keep up with demand, especially when you're making them in your home kitchen. So, if you're trying to earn extra money, this is a great way that definitely works. It's perfect for anyone who has access to a kitchen and is willing to put forth a little effort. So, give it a try, you'll be glad you did! Plus you get to eat all you want!!! (My favorite part)So if you're tired of trying all the free recipes where you invest your money for materials and in the case of tamales your time which can be considerable and have not gotten the tamale you really wanted, then, maybe it's time to try a recipe that's not "Free". One that sells primarily for one good reason, the tamales are the best.
NOTE: Most people sell tamales which were made in their home kitchen, this may be against local health codes. Normally the only way you would hear from the health department is if someone filled out a formal complaint (local competitors for example). The visit would generally be to inform you of the "rules" and to offer suggestions of what changes you might have to make to continue producing the product. We made and sold these tamales in the Dallas, Tx. area for almost 9 years and never had a problem.

They are frozen and have an ICE-PAK included, if they are thawed when they arrive, they are still OK. Tamales can be thawed and refrozen several times and still be fine. For Heating: It is best to steam them for about 20 minutes or simply place a dripping wet paper towel into a ziplock bag and microwave (approx. 1 minute per frozen tamale) watching for the bag to pop open. At this point they should be ready or reseal the bag and heat a little longer.
